Mini filled bell peppers

Tasty appetiser bites.

Ingredients:

  • 300 gr minced meat (I take a mix of pork and veal for this recipe)
  • 65 gr bread crumbs
  • 6 Mini bell peppers
  • 1 egg
  • Salt
  • Pepper
  • Paprika powder
  • 2 Tbsp parmesan cheese

Steps:

  1. Preheat your over at 180 degrees.
  2. In a bowl add the meat, breading and the parmesan subsequently mix thoroughly.
  3. Once fully mixed, add an entire egg and mix once more.
  4. Slice the mini bell peppers in two and clean them out (removing seeds and hardened areas).
  5. Take a toothpick (or small knife) and punch several tiny holes through the mini bell pepper halves. This will ensure the juice of the meat can freely flow out and all the liquid goes away during the cooking phase.
  6. Make small meatballs and place them in each of the bell peppers halves.
  7. Place them on a roasting oven tray and cook them in the oven for 30 to 40 minutes (depending on the size of your bell peppers).

Tips and tricks:

  • During the last 15 minutes you can add some cheese scrapings on top  (for example Emmental) to receive a nice crunchy crust.
