Chicken broth

The base of all tasty dishes

Ingredients:

  • 1 Chicken
  • 4 chicken stock cubes
  • 2 vegetable stock cubes
  • 6 celery branches
  • 5 carrots
  • 2 leeks
  • 2 onions
  • 1 garlic clove
  • 1 tbsp salt
  • 1 tbsp pepper

Utensils:

  • 1 large recipient

Steps:

  1. Peel the carrots, the celery, the leeks, and the onions.
  2. Cut the vegetables in big chunks (about 5 cm long).
  3. Crush the garlic clove with the side of a knife and peel it.
  4. Cut away the chicken rump and throw it away.
  5. Add the complete chicken in a large pot, and then cover it with the vegetable cubes.
  6. Submerge all the contents of the pot with water.
  7. Add the garlic, salt, and pepper.
  8. Cover the large pot with a lid and cook for 2,5 hours on a low heat.
  9. Once cooked, turn off the heat and remove the chicken and vegetables from the pot.
  10. Set aside the meat from the chicken.
  11. Filter your chicken broth and adapt the seasoning to your taste.

Tips and tricks:

  1. The chicken broth itself can in turn also be used in other recipes. It can also be frozen for future usage.
  2. The meat set aside can be used in different recipes using cooked chicken. The chicken can also be baked in a pan with butter to eat just like that.
  3. To add more flavour to the soup (depending on your tastes), you can:
    • add a bouquet garni
    • pierce the onion pieces with cloves (giroflier).
